I have no idea why but pizza just sounded amazing last night and once I decided that's what I wanted for dinner, I was on a mission to make it happen. I even had to make a second stop to get the fresh basil, but was that ever worth it!
Here's what you need:
1 package of pizza crust (or 2 if you like a thicker crust)
1 package of shredded cheese
1 cup of cherry tomatos, halved
1 package of fresh basil
Pizza sauce
Freshly ground pepper
A drizzle of olive oil and balsamic vinegar
Onion (optional)
What's next:
Heat oven to 475F. Mix the pizza crust and let rise. While it is rising, cut the tomatos, onions and basil and place in a bowl. Add pepper and a drizzle of balsamic and stir all together.
Pat and stretch the dough onto a greased cookie sheet and brush with olive oil. Add sauce and spread to the edge. Top with tomato combo and sprinkle it all with cheese.
Bake in the oven for 10-12 minutes or until crust is golden brown.
